I just enjoyed spaghetti squash for the first time. I've been wanting to try it for a while but had never gotten around to it. It was easy to make and a great substitute for pasta. I sauteed some garlic in olive oil and then added some Roma tomatoes to put on the squash. Some grilled chicken for my protein and I had a very delicious meal. I love Italian cooking and could eat pasta every meal if I could, so this is very exciting knowing I can replace the pasta with the squash. I'm going to try using it for a lasagna this weekend. What are some of your favorite zone/paleo friendly dishes. What veggies do you like and how do you prepare them? Any other good substitutes for pasta, grains, rice? Post thoughts to comments.
