Portobello mushrooms instead of toast with eggs! I toast them and cut them up and eat.
Yesterday I had a lamb dish that had shredded lettuce instead of rice. It was remarkably good.
In N Out in CA has the protein burger that uses lettuce instead of bread.
I've done spaghetti squash, and once in a while it turns out fabulous, but I've also had it not separate right, I'm not sure if I under cook it or it is under ripe in the first place.
that's all the ideas I got at the moment. I've seen folks shred zucchini instead of pasta but I've never done it.

One of my food tricks is to throw raw spinach into everything, especially if I'm heating up leftovers in the microwave. For example, if I have beef stew, I'll fill the bottom of the container with spinach before reheating. Works great for saucy foods (Italian, Mexican, Chinese, Thai, etc.).

Great ideas. I don't eat mushrooms but the portobello sounds like a great substitute for the toast.
I'll have to try the spinach trick.

Yes - great focus on nutrition - and taking away the pasta, grains, and rice isn't too bad. I did take your suggestion Justin on the spaghetti squash - baked in the over for an hour and made a meat sauce which went very well on top. Felt like I was eating spaghetti!! I just am having a difficult time with breakfast! Am getting tired of eggs with spinach, ham and avocado - I rather have a protein drink with milk or yogurt. Any other suggestions? which doesn't require cooking in the am! lol
